16 Lamb cutlets
2 chopped cloves of garlic and 2 whole
Oil, salt and tomato sauce
Orly batter
3 beaten egg whites
250 g. flour
2 sachets of “Gaseosa El Tigre” sweetened baking soda (10 g.)
3 egg yolks
1/4 litre of cava sparkling wine and salt

Preparación
Beat up the egg whites with a food mixer and add the flour, the salt, the sweetened baking soda, the yolks and the cava, all little by little, until the required thickness is obtained. Leave this to stand for 1h. and you will get an excellent Orly batter mix. Salt the cutlets, place these in an oven dish and put the chopped garlic and a few drops of oil on top. Put these in a hot oven at 200º for 5 min., take these out and allow them to cool. Batter the cutlets with the Orly mix and fry them in a frying pan with plenty of hot oil. Place two whole cloves of garlic in the oil. Drain them well and serve them with tomato sauce.
