1 cup of flour
1 egg
1 soup spoonful of sugar
1 sachet of “El Tigre” baking soda (5 g.)
1 cup of milk

1-Mix the flour, the sugar and the El Tigre baking soda, then add the milk and the egg yolk and beat up with a mixer so there are no lumps, after which you should add the egg white that you have reserved, beaten up until stiff, trying not to stir to much so that the mixture<br />stays spongy. Leave to stand for 15 minutes. Pour a little oil into a large frying pan just to grease this and then remove. Start putting portions of the mix into the pan on a fairly low heat because otherwise the surface of the fritter will burn. When little holes start to break out in the fritter (its eyes!) turn it over and cook it on the other side. They turn out delicious, rather like express sponge cakes. After making them they are usually served with cream, caramel syrup, chocolate, jam, butter... or anything else you fancy!
