Ingredientes
250 g. flour
250 g. icing sugar
125 g. butter
5 eggs
1 spoonful of soluble coffee
2 sachets of "Gaseosa El Tigre"  sweetened baking soda (10g.)
2 spoonfuls of coloured sugar and a few grains of coffee
1 sprig of mint

Coffee sponge with orange sauce

Preparación

The butter, which should be soft, is beaten up with the icing sugar, at the same time as adding the 5 eggs (one by one). The soluble coffee is added with the flour, previously mixed with the two sachets of "El Tigre" sweetened soda. The mixture is poured into a mould rubbed with butter and flour. This is placed in the oven at about 180º for 30 min., then taken out and left to cool. The orange juice is mixed with the sugar and corn flour, heating this up to boiling. Pour the sauce over the sponge, decorating this with a few grains of toasted coffee, mint leaves and coloured sugar.
