Aubergines in batter
Preparación
Cut the aubergines in slices and place these in water with salt 10 hours before. Drain the aubergines and place these on a dry cloth. Make the mixture for the batter: put the flour, the sweetened baking soda and the beaten egg into a recipient, add water and mix until you get a soft light mixture, and add the salt. Heat up the oil and fry the aubergines, after dipping these in the mixture. Serve. This batter can be used for meat, fish and other vegetables too.
